BREWING INSTRUCTIONS

Traditional Brewing Style

1. Either a traditional Chinese small clay tea pot or a large western style tea pot will be fine.

2. Warm the tea pot inside with hot water. Pour out the water. (A warm tea pot will wake up the tea.)

3. Measure tea for tea pot. Put tea in pot. (The average ratio of tea to water should be one gram for 30 cc water. )

4. Add a little bit of hot water to the tea, about 25%. Then pour out the water. For a second time we wake up the tea leaf. Oolong especially needs a second warming to wake up the black dragon. (Now enjoy the aroma of the warm tea in the pot.)

5. Pour hot water* into the tea pot until it is completely filled.

·        When using a clay tea pot, pour a little water on the outside of the  pot. When the water has completely evaporated (about one minute and thirty seconds), this is the time to drink the tea.

·        A second method for judging the correct timing is simply look into the pot and see if the tea leaves are open.

·        For glass or porcelain tea pots the average time for brewing is 2--3 minutes.

*For fullest flavor hot water temperature:

Green tea 175—190 degrees F
Jasmine tea 175—190 degrees F
White tea 180—190 degrees F
Oolong tea 190—210 degrees F
Black tea  210 degrees F
Pu-Erh 210 degrees F

6. Pour tea through a strainer into the pitcher.

7. Warm the inside of the cups with hot water. Pour out the water.

8. Pour tea into the cups.

Three pleasures in one cup—color; aroma; lingering flavor.

9. Enjoy!
